PRODUCER INFORMATION

Finca Las Flores is a 14.5 hectare farm in the village of San Isidro, in the city of Acevedo in the Huila department. The Ayure family started their farm in 1990 with 18,000 coffee trees. Each year they continued to grow until they reached 90,000 coffee trees.

This limited release is an exceptional Pink Bourbon coffee that is a rare and coveted find. Even in ideal growing conditions, Pink Bourbon is challenging to cultivate. In addition to meticulous plant maintenance, farmers must isolate their crops to encourage successful cross-pollination and pink fruit's ongoing production.

With the help of their son Johan, the Ayure family began to adjust production and improve post harvest processing. Today Finca Las Flores offers varieties such as: Pink Bourbon, Tabi, Java, Maracaturra. In addition, they have implemented fermentation processes in exotic varieties such as Wush Wush and Bourbon Citron. The lot was milled by Agroeco in Santa Marta, Magdalena. Fermentation in cherry for 24 hours and 60 hours of fermentation in Tula with bag. Description of drying "Casa Elba".

ORIGIN INFORMATION

There are few countries more famous for their coffee than Colombia. And within Colombia, no region produces more coffee than Huila, a mountainous department lying in the southwest.

But Huila’s value isn’t just in its quantity of coffee. It also lies in its quality. It regularly produces Cup of Excellence-winning lots. What’s more, in 2013, it received Denomination of Origin status – the same status awarded to champagne, Roquefort cheese, and many other foods and beverages with unique, location-specific characteristics.

Coffees from Huila tend to have brighter acidity and stronger fruit notes. Part of the reason why coffees from Huila are so complex is because the coffee has genetic variability and is grown in an area with climatic diversity.
