Whole bean or ground?

The choice of grind will depend on how you brew your coffee. Usually, we recommend ordering your coffee whole bean and grinding it fresh before you brew. But if you don’t have a good-quality grinder, let us pre-grind it for you!

We recommend the following grinds for specific brewing methods:

  • Cold Brew A coarse grind for making cold brew by any method you choose

  • French Press a semi-coarse grind for immersion methods

  • Drip for regular automatic drip coffee machines

  • Cone filter, V60, Clever or Chemex for pourovers

  • Home Espresso or Aeropress a fine grind for home espresso machines and your Aeropress

Coffee Taste Descriptions

Are they real? Does this mean your coffee is flavored?

Our coffees do not contain added flavors. However, each of our single-origin coffees and blends has its own unique flavor. Those flavors and aromas come naturally from the coffee bean and can be affected by factors like country of origin, altitude, growing practices, processing techniques, and roasting styles. Coffees roasted more lightly have more of the characteristics unique to each origin, while those roasted on a darker level have more of the classic chocolatey and smoky tones.

The tasting notes that you’ll find on your bag of Wellborn Coffee are what we taste when we brew and drink the coffee. By creating a connection between what we’re tasting in the coffee and familiar flavors we’ve had before (chocolate, lemon, toasted marshmallow, etc.), it’s easier to communicate the often complex tastes that coffee can take on.

Not to mention there are over 800 compounds in coffee’s aroma alone.

What is the best way to store coffee?

The best way to store coffee in an airtight container in a dark cupboard. There’s no need to freeze! Just keep your beans away from sunlight, air, and humidity. Moisture and oxygen is what make coffee goes stale.

Does coffee go bad?

We recommend drinking your bagged coffee within 4-6 weeks of the roasting date. The coffee will not spoil after this date, but it will lose the amazing aromas and flavors we strive for in roasting… basically it goes stale. You can tell a coffee is stale by looking at the whole beans, if you make pour-over you’ll notice a flat lifeless bloom and the smell will all but be gone.

With the passage of time, coffee compounds undergo physical and chemical changes that alter the aroma and taste of both the raw material and the finished product. Carbs go stale, lipids go rancid, volatile organic compounds evaporate, and other components change with exposure to oxygen (oxidation) or water.

Fresh coffee is best, period. Fresh ground, if you have the beans and a grinder; as close as possible to the date of purchase if you’ve bought your coffee pre-ground. If it looks or smells a bit “off” (rancid, moldy, or mildewy), throw it out. If it smells flat, it’s going to taste flat, since the smell of coffee is such an important part of its flavor profile. Unless it’s gone moldy, you shouldn’t get sick from expired coffee, but just because you can drink coffee that’s past its expiration date doesn’t mean that it’s a good idea. Freshness matters!

Packaging

What kind of packaging do you use?

Our coffee bags are made by Pacific bag company. We use a lined kraft paper bag that has a pocket zip and one way valve, features which keep the coffee fresh and resealable. The pocketzip has a revolutionary built-in-tear-tape that allows the bag to be easily open and resealed. The bag also has a one-way valve which lets the natural gas that build ups after roasting to escape without letting harmful oxygen in. This is why your box of coffee on arrival will smell a little like coffee heaven.

That said, these bags are not compostable. Until a bag is made that is 100% compostable (including the valve, tin-tie and any other elements like a label, printing, etc.) we will keep using bags that keep the coffee fresh. We will continue to work with Pacific Bag company as they invent new ways to package coffee in compostable ways. For now you can cut away the plastic parts and recycle each part separately.

By the way, the photos you see on our site are of our actual product. What you see is what you buy, and is what is in the box on arrival.
